My experience so far with baking cakes, not just the correct recipe that make the cake yummy and look good but also the way we set up the oven is important. this is actually the most difficult part when we are baking.
You can read your oven manual as a start, but trying and practicing will give you a kind of feeling how to set up the correct temperature for each type of cakes.
Here is one of the most simple basic cupcakes recipe, probably the method is not the same as the recipe that you usually find on internet. I modified it base on my preference, I find this method is simpler. some recipe suggest to beat the butter until fluffy, you also can do that if you prefer.
Ingredients:
- 175 gr self-raising Flour
- 150 gr sugar
- 175 gr butter (melting)
- 1 tea spoon baking powder
- 3 eggs
Method:
1. Preheat the oven to 180C
2. Put eggs and sugar in a bowl and beat until combined
3. Sift the flour, baking powder into the egg mixture
4. Pour the melting butter to the bowl
5. Mix them all with a spoon
6. Spoon the mixture into paper cases
7. Bake for 20 minutes until risen and golden
8. Cool in the wire rack
9. Start to decorate it when it's already completely cool
You can reduce the sugar if you prefer less sweet cupcakes.
If you want to make chocolate cupcakes, reduce the flour to 140 gr and add 35 gr chocolate powder.
You also can add any type of dried fruit if you like e.g raisin, cranberry or nuts.
